Some days ago, at Stocksy blog they published one of our recipes with our photos, and we want to share it in our blog too! A treat for sweetness lovers like us!
5 egg yolks
110g of sugar
110g of fresh lemon juice
60g of cold unsalted butter
Shortcrust pastry (ideally homemade but you can also buy it)
120g of egg whites
200g of sugar
1. Grate the lemon’s rind. Mix the lemon zest, eggs and yolks with the lemon juice and the sugar in a large bowl.
2. Put the mix in a pot and cook over low heat constantly mixing with a spatula until it thickens. Turn off the heat and keep mixing for a few more seconds. Strain the lemon curd with a sieve and then add the cubed butter and mix. Cover the cream with a plastic wrap, let it cool and then place into the fridge.
3. Sprinkle the table lightly with flour and roll the dough out until it’s about 5mm thick. When the dough is about 5cm larger than the tin, drape it over the rolling pin and lay it across the flan tin. Press the dough into the corners of the tin using your fingers. Fill the tin with dry chickpeas or dry beans to avoid swelling. Put the tin into the oven at 200ºC (390ºF) for 15-20 minutes until the shortcrust is golden. Leave to cool and remove the chickpeas and the tin. Fill the tart with the lemon curd.
4. For the meringue, put the egg whites in a larger bowl. Whisk until soft peaks form, then add the sugar a spoonful at a time, whisking between each addition. Whisk until the meringue is smooth and thick. Put it over the tart with a pastry bag or a spoon. Return to the oven for 10 more minutes or until the meringue is golden. Leave to cool and enjoy!
